Fresh Pear Cake

  • 4 C. fresh ripe pears, chopped
  • 2 C. sugar
  • 1 C. chopped pecans
  • 3 C. flour
  • 1/2 tsp. cinnamon or nutmeg
  • 1/2 tsp. salt
  • 2 tsp. baking soda
  • 1 C. vegetable oil
  • 1 tsp. vanilla
  • 2 well beaten eggs

Have eggs at room temperature. Mix pears, sugar, and nuts and let stand 1 hour, stirring often to make own juice. Add dry ingredients, oil, vanilla, and eggs. Do not use mixer; stir by hand. Pour batter into greased and floured tube pan (also a bunt pan may be used). Bake in preheated oven at 350 degrees for 1 hour 15 minutes..
