Southwest Supreme Pecan Pie

(1ST Place – 93 Western Pecans Growers Assn,)

1 C. pecans ¾ C. light corn syrup

4 eggs ¾ C. dark corn syrup

¾ C. sugar 1 teaspoon vanilla

½ teaspoon salt 1 tablespoon melted butter

9 – inch unbaked pastry shell

In a medium bowl, beat eggs lightly. Add sugar, salt, corn syrup, butter and vanilla. Stir well. Pour mixture into unbaked pie crust and place pecans on top. Place in a preheated 400-degree oven and reduce temperature to 350 degrees at once. Bake 40-45 minutes or until filling is firm. Cool.

TIP: A homemade crust with finely chopped pecans will add to the flavor of your homemade pie
