Fresh Pear Cake

4 C. fresh ripe pears, chopped

2 C. sugar

1 C. chopped pecans

3 C. flour

1/2 tsp. cinnamon or nutmeg

1/2 tsp. salt

2 tsp. baking soda

1 C. vegetable oil

1 tsp. vanilla

2 well beaten eggs

Have eggs at room temperature.  Mix pears, sugar, and nuts and let stand 1 hour, stirring often to make own juice.  Add dry ingredients, oil, vanilla, and eggs.  Do not use mixer; stir by hand.  Pour batter into greased and floured tube pan (also a bunt pan may be used).  Bake in preheated oven at 350 degrees for 1 hour 15 minutes.
